Although we experienced the third year of drought, and received nearly 75% of normal precipitation for the year, our small clusters had highly concentrated flavors. An early bud break gave way to a cool spring with a long flowering period followed by somewhat uneven fruit set. Our yields were lowest with the Pinot Noir, and our harvest was early on all varietals by at least two weeks. The benefit of this season were staggered pick dates and time in the cellar to pay attention to every lot.
Our Gewürztraminer is whole cluster pressed over a two hour time period and then chilled to 45° to settle in tank for 2 days. The juice fermentation begins naturally with native yeasts and slowly at a cool 50° for 2 – 3 weeks. Once the brix reaches 10°, the temperature is raised to complete fermentation. The wine is then racked clean into neutral French oak barrels where it settles for 2 - 3 months prior to bottling. This is a bone dry Gewürztraminer which accounts for 20% of the tonnage crushed in Napa County
